CHICKEN MALAI FRY

ABOUT THE DISH

Chicken Malai fry is a special dish marinating chicken in spices and masala mix.

INGREDIENTS:
chicken - 500 gm
pepper - 3 tbsp
ginger garlic - 3 tbsp
curd - 3 4 tbsp
fresh cream - 150 gm
lemon - 1
oil as required
salt as required
corn flour - 1 tbsp
coriander green chilly crushed

SOUTH INDIAN STYLE KFC CHICKEN

INGREDIENTS

  • chicken - 250 gm
  • chilly powder - 2 tsp
  • coriander powder - 2 tsp
  • pepper -2 tsp
  • turmeric - 2 tsp
  • baking powder- 1/4 tsp
  • egg -1
  • corn flour- 1/3 cups
  • all purpose flour - 1/3 cups
  • oil as required
  • brown sugar - 1 tsp
  • ginger garlic paste - 2 tsp
  • butter milk - 250 ml

METHOD
  1. In a bowl, add the  chicken, coriander, chilly , pepper, turmeric , ginger garlic paste , salt, and brown sugar Mix well.
  2. In a mixing bowl, add the butter milk, 1 whole eggs, one tsp of salt and , mix well. Add the coated chicken to the butter milk,refrigerate and marinate overnight or a minimum of 2 hours.
  3. In a  bowl mix the all purpose flour, cornflour (cornstarch) and baking powder. Mix well. Remove the chicken pieces from the butter milk and place in spicy flour coating one at a time.  Repeat process until each piece has been coated in flour mix.
  4. Place the chicken in the hot oil 2 or 3 pieces at a time until golden brown.  Remove and place over a wire rack for the fat to drip. Serve immediately.

PRAWN CURRY

ABOUT THE DISH
   This is a south Indian style prawn curry filled with delicious cashew milk and spicy ingredients.

Ingredients

  • prawn- 250 gm
  • small onion -250 gm
  • tomato- 1
  • egg -1
  • ginger garlic paste-3 tsp
  • chilly powder - 2 tsp
  • coriander powder - 2 tsp
  • corn flour -1 tsp
  • turmeric - 2 tsp
  • cumin/pepper powder - 2 tsp

Method

  1. In a cooking vessel add coconut oil and heat it
  2. Add small onions and saute for few minutes
  3. Add tomatoes, chilly, cumin, pepper, turmeric and saute
  4. Mix the marinated prawns with the above
  5. Leave it for 30 mins
  6. In a separate pan, fry the marinated prawns
  7. Add these fried prawns in the gravy prepared mixture
  8. Finally add Cashew paste in the curry
Serve the curry hot with Rice or bread!!!
